Spaghetti squash is a delicious, and healthy side dish to accompany your main entree. You can find a spaghetti squash at your local farmers market or in the produce section at the grocery store. It looks like this:

To make this side dish you’ll need:

  • 1 spaghetti squash
  • 1  tablespoon  butter or margarine, melted
  • 1/2  tablespoon  honey
  • 1/4  teaspoon  salt
  • 1/4  teaspoon  pepper
  • 1/2  cup  chopped onion
  • 2  teaspoons  olive oil, divided
  • 2  garlic cloves, minced
  • 1/4  teaspoon  salt
  • 1/4  teaspoon  pepper

Preheat the oven to 450 degrees. Melt the Butter and honey together and stir until well blended. Cut the squash in half and remove the stem and all the seeds. Brush the butter and honey mixture over the cut sides of the squash and roast them in the oven (I used clear pyrex casserole dish) for 35 minutes.

Using a fork, rake the spaghetti – like pulp from the center of the squash, and place in a bowl to use at the end. You can pretty much clean the whole squash out, everything but the skin! Sauté the chopped onion with 1 teaspoon of olive oil in a large skillet over medium-high heat 5 minutes or until tender. Add the garlic and sauté for 1 more minute. Be careful not to overcook the garlic, or it will start to loose its flavor.

Now, add the squash, salt, pepper, and another teaspoon of olive oil to onion mixture in skillet, and cook, stirring constantly, for 5 minutes.

Taste the squash mixture and see if it tastes sweet enough… if not, add a little butter and stir it in. It’s healthier if you don’t add more butter!
